I think of the knife blocks I have made as pieces of sculpture in wood; they just happen to have the added benefit of being useful.
As with the mirror frames, they can often take advantage of some more interesting woods that would be difficult to obtain in larger quantities. They are also a good opportunity to be a little more freeform with the shape than for larger pieces and more three dimensional then the mirror frames.
